Breakfast Granola for Peri Menopause

Breakfast is one of the most important meals of the day, especially during the Peri Menopause when balancing your blood sugar is key.

I love Homemade granola as it’s lower in sugar and additives, compared to those found on the supermarket shelf and great for your hormones.  Plus it’s so easy to make.

I serve my granola with Greek yoghurt for added protein, eating protein with every meal is important. Sometimes make overnight granola similar to overnight oats.  With added Pomegranate seeds or blueberries high in anti oxidants, which may help to fight against heart disease and improve testosterone levels.

This recipe is rich in Phyto oestrogens, vitamin E, zinc and calcium.

Chocolate Orange Granola

200g oats

60g mixed almonds and hazelnuts

30g pumpkin seeds

30g coconut chips

Zest of 1 orange (I add the juice of 1/2too)

1 tsp salt

60ml maple syrup

1 tsp vanilla extract

80 ml coconut oil melted.

1 tbsp cocoa powder

Line a baking tray with greaseproof paper.  Pre heat over to 160c.

Combine all the ingredients and stir well.

Spread the mixture over the baking sheet and bake for 40 minutes, stirring every 10 minutes until the granola is golden brown.  Allow to cool and store in an airtight container for up to 2 weeks.
